The Boston Eater wrote about cold brew today. They were kind enough to include Ride Studio Cafe in the list of bars that serve this perfect summer drink.
Last week the Ride Studio Cafe shared some reasons they offer cold brew:
“Brewing with cold water extracts the flavor elements typically found in coffee, but with a bit less of the acid. […]
“Perhaps one of the coolest elements of cold brewing is the wide range of flavors you’ll taste when using different coffee varietals. You’ll find that some varietals are sweeter and brighter, while others are toastier and more subdued. […]
“No matter your coffee preference, chances are that we’ll be trying out a new cold brew each time you come to Ride Studio Cafe.”
The Boston Eater had this to say:
Iced coffee aficionados argue that the best cup is a cold-brewed cup […] Cold-brewing often produces a less bitter coffee, allowing more subtle flavors to shine through. There are a variety of ways to cold-brew, mostly consisting of a 12-to-24 hour steeping period, either refrigerated or at room temperature, followed by filtering and diluting with cold water. Boston coffee shops have taken note of the trend, and so […] an increasing number have begun to offer cold-brew coffee in recent years.

- Time Marker: Tax Free weekend. A bit busy at the Studio today. Not much time to work on other projects.
Location Friday: Seven || 7:35 am – 9:40 pm 
- Thinking: Idea generation vs. doing the work. I was talking with someone today about this. I – and this person – generate a lot of ideas. That’s always been the easy part. It’s the execution of the ideas that’s time consuming and important. As Michael Porter is often quoted – and I paraquote – there are no new strategies, just execution. Why isn’t “paraquote” a word? It is now.
- Time Marker: My brother, Ken Vandermark, posted a Kickstarter project! Very exciting. Check it out. And contribute to an amazing project.
Ken Vandermark is working on a new project – one of many that he creates each year. This time it’s through Kickstarter. The Chicago Jazz Festival invited Ken to be the Artist in Residence on this year’s program. One of the bands he’s presenting is the Resonance Ensemble, an eleven piece, international group of improvisers. Vandermark is employing Kickstater as a means to help share the Ensemble’s music with a wider audience – those that can’t make it to the Festival this year. Invest a few dollars and get a copy of their upcoming CD or one of a number of other amazing items.

Location Thursday: Seven | Studio || 7:35 am – 8:40 pm
- Business Development: Titanium sourcing continues to get more and more difficult. I see this as a positive situation but it sure does take a disproportionate amount of time to manage now. Sources are fewer; partners are scarcer; material quality is less interesting to most people. Conversely, we’re actually pushing harder on improving material quality. A post for another day. Seven’s titanium is better than it’s ever been – and that’s saying a lot – but it’s more and more time consuming to keep the incremental improvements going.
- Recruiting: We hired one of the eight for which we’re searching. Not bad so far. Still too many candidates through which to search. Hours each day going toward this right now. Matt O. is helping search for one more person and then it’s all on Chantal and me. And a bit on Jennifer M.
Location Wednesday: Seven || 7:25 am – 9:40 pm
- Graphic Design: Brochure 2012: Reprints in process. Just a short trun to bridge the gap to 2013. We ran through the first run of 2012 brochures too quickly. A good problem. Still a brochure I enjoy reviewing. 2013 will be so different – in all good ways.
- Interview: Matt Phillips of Bicycling Magazine is writing a piece about current road bike trends. He’s focused on one specific aspect of this world. He asked me a series of questions that provides some interesting answers. I’m sure it’ll be edited down to a sentence or two but I’ll post some of our interaction as soon as his article is published.
Mary, Mike, and I have been talking for a while about designing 650b bikes for their 2013 season. Mike and Mary are doing more and more multi-day mountain bike endurance events and a set of 650b bikes are perfect for this type of race.
Mike writes:
We have come to the conclusion that this could be an optimal wheel size for many reasons that split the current opinion between 29 and 26″. I have been putting a good deal of thought into the characteristics that we would like to incorporate into these bikes […]
Seven has been building 650b bikes for a few years now – when we built our first 650b’s there was only one tire choice – so we’re excited to get our world-class racers on them. And we’ll be incorporating some new design ideas.
We have a number of new ideas we’re putting into these frames, and a lot of iterating from their most recent 29ers. This pair of mountain bikes will be the most technically advance that Seven’s ever built. A long list of idea’s I’ll add here as we execute.

Location Tuesday: Studio | Seven | Studio || 7:45 am – 8:25 pm
- Design: Website 2013 for Seven Cycles. Two page designs have gone “live” this week. So far the feedback has been good. We’ve got a couple more page systems going live over the next few days. The mobile versions of the site are now working, too. That’s a pain but important. The site seems to work across all the platforms we could test.
- Design: Cyclocross skinsuits season for Ride Studio Cafe. Adding a few people to the cross team.
- Project: Cyclocross season project. Trying to find time to work with Chip on two cool cross
Location Monday: Seven || 7:45 am – 2:20 pm
- Business Development: Looking at bringing in a new bike brand to the Ride Studio Cafe. Very exciting. Hoping to have it be public next week. It’s been a long time coming and it’ll impact the entire feel of the Studio.
- Graphic Design: Cross bike ad for Seven Cycles completed and off to the Cyclocross Magazine. I think we’ll see it in print in a few weeks. It was a challenging ad but I think it came out well. Thanks for Dave Chiu for the photo – and Matt Roy for being our model.
